Chef Sumaya Obaid reveals the flavours from around the world that have shaped her tastebuds

Imagine sipping the perfect cup of coffee in a quiet café, hidden among the alleyways of Dubai’s historic neighbourhoods. For Chef Sumaya Obaid, moments like these capture the magic of food – the way a simple meal can tell a story, evoke a memory, or transport you to a different time and place. 

Here, Sumaya shares her most treasured culinary touchpoints from around the globe – the cafés, restaurants, and street food stalls that have become milestones in a life filled with delicious delights. 

Where was the best coffee you ever had? 

The best coffee I ever had was at an Arabica. They used freshly roast beans and brewed each cup with precision. The result was a rich aromatic blend that left a lasting impression. Simply perfect! However, the best coffee shop I recently discovered is this hidden gem tucked away in Al Fahidi Historical Neighbourhood, called XVA Café. A must-try!

Where do you go in Dubai when you’re craving more international flavours?

There are three places. My favourite spot for authentic Italian food is Il Borro Tuscan Bistro in the DIFC area, where the Italian chefs make sure to respect the traditional techniques and flavours of each region. 

Hakkasan at the Atlantis The Palm is an excellent place for Chinese cuisine thanks to the high-quality ingredients and modern presentations. 

Finally, the culinary artistry of the gastronomic Ariana offers the best Persian kitchen one can look for. But I have to admit that my guilty pleasure remains a good street food shawarma at Al Mallah in Al Satwa. This iconic spot is known for serving up juicy, perfectly spiced shawarma wrapped in freshly baked bread in the warm atmosphere unique to Al Mallah. 

Has there been one recent dining experience that has inspired you the most?

As a chef, I am passionate about curating unique dining experiences rather than simply enjoying them. My collaboration was Nova so exciting. Being able to share the authentic taste of the Gulf with a global audience in a soulful island resort in the Maldives – how can it get better than this? Naturally, it inspires the curation of my future culinary endeavours. 

Is there one dish you eat everywhere you travel? 

I always try local street-food specialities. Whether it is spicy tacos in Mexico City, a decadent pad thai in Bangkok or an authentic falafel in Istanbul, experiencing the flavours of a destination through its street food is an essential part of my culinary adventures.

Pistachio baklava

Which dessert at a bakery stands out to you the most?

The dessert that still lingers in my dreams is the pistachio baklava from Karaköy Güllüoğlu, a family-owned bakery in Istanbul. The delicate layers of flaky pastry, light honey, and crunchy pistachios created the perfect result, turning each piece into a standout dessert that I always fondly remember.

Tell us more about one memorable dining experience you had growing up that shaped your love of food. Where did it take place and what was it?

There is one memorable moment from my childhood that made me fall for the art of cuisine. A family dinner at an Italian seaside restaurant left an incredible mark on me. The fresh seafood, the homemade pasta, and the warm hospitality instilled in me a lifelong appreciation for good food and shared moments around the table.
