One&Only The Palm Enters a New Culinary Chapter with Yannick Alléno

Two new restaurants by Yannick Alléno bring Japanese precision and Riviera energy to One&Only The Palm.

One&Only The Palm has entered a new culinary chapter with the opening of L’Abysse Dubai and Casea 101 by Yannick Alléno on 17 October 2026. The two restaurants expand the resort’s long-standing partnership with the celebrated French chef, adding new dimensions to an already distinguished dining collection.

The openings are built on STAY by Yannick Alléno, the resort’s two-MICHELIN-starred restaurant dedicated to contemporary French gastronomy. With L’Abysse Dubai and Casea 101, the partnership now spans three distinct culinary worlds, each with its own atmosphere, identity and sense of occasion.

“Creating something new and still finding ways to surprise is always a challenge. With these two openings, we pushed every aspect of the experience further. One&Only The Palm supported us in this bold undertaking, and I believe we have created something truly unique,” says Yannick Alléno.

L’Abysse Dubai marks the fourth global outpost of the concept, following its two-MICHELIN-starred Paris flagship, as well as L’Abysse Monaco and L’Abysse Osaka. The Dubai restaurant offers an intimate omakase experience centred on exceptional ingredients, seasonality and precise Japanese craftsmanship.

Guided by Alléno’s philosophy of the “cuisine of time”, the experience explores how maturation, preparation and patience shape flavour and texture. Art and considered design extend this sense of craft beyond the plate, creating a close dialogue between chef, ingredient and guest.

In contrast, Casea 101 by Yannick Alléno brings a lively, Riviera-inspired energy to the resort. Set beside the marina and the Arabian Gulf, the restaurant places seafood and shellfish at the heart of a Mediterranean menu shaped by Italian culinary traditions and the relaxed spirit of the French Riviera.

Designed to evolve throughout the day, Casea 101 moves from sunlit lunches and seafood by the water to aperitivo and golden-hour drinks before music and the bar carry the experience into the evening.

Together with STAY by Yannick Alléno, the new openings create three distinct destinations within One&Only The Palm. STAY remains rooted in refined French technique, L’Abysse Dubai offers an intimate exploration of Japanese precision, while Casea 101 embraces the generosity and social rhythm of life by the sea.

“These new openings mark an exciting new chapter for One&Only The Palm, bringing together exceptional culinary talent by Yannick Alléno, distinctive concepts and a new energy to the resort,” says General Manager Rahul Sharma.
