    Jumeirah Marsa Al Arab Reveals 1206, The New Hidden Room Completing Its Culinary Collection

    Jumeirah Marsa Al Arab has announced the opening of 1206, a new contemporary dining destination set to open on 30 October, 2026. Named after a once-hidden room on the property’s fourth level, 1206 offers diners uninterrupted views across Dubai, stretching from Jumeirah Burj Al Arab to Burj Khalifa.

    The restaurant’s menu is centred on seasonality, sustainability and carefully sourced ingredients. It draws inspiration from British cooking, along with French, Mediterranean and Scandinavian influences. Each dish is prepared with a focus on simplicity, precision and the natural character of the produce.

    Leading the kitchen is Head Chef Stephanie Haywood, whose career includes experience at Michelin-starred restaurants across the UK, Scandinavia and the GCC. Raised in Sussex, England, Chef Haywood developed an early appreciation for the relationship between land, produce and the dining table. Her culinary approach includes fermentation, foraging, butchery and open-fire cooking. At 1206, these techniques are used to enhance flavour while keeping the ingredients at the heart of each dish.

    The menu places vegetables on an equal footing with protein and follows a whole-ingredient philosophy. Bones and offcuts are transformed into broths, sauces and stocks, while fermentation, curing and slow cooking add depth and texture to the food.

    Designed by international studio AvroKO, the interiors feature warm, earthy tones inspired by Levantine coastal architecture. Carved marble, handcrafted textures and custom cabinetry create a refined setting, while the terrace connects the restaurant with its surrounding landscape.

    1206 will be open from Tuesday to Saturday, between 6pm and 11pm. The restaurant completes Jumeirah Marsa Al Arab’s culinary collection with an ingredient-led dining experience that brings together contemporary technique, responsible sourcing and panoramic Dubai views.
